I am now blowing the interior light 7.5a fuse?

Check your drivers door where wires run through the rubber for snapped wiring as this is a possibility.

Cheers will do, I replaced it tonight, and it instantly blew the fuse.
The LEDs have been fine for 5 months, so I'm wondering what to check.

Sounds like the wiring in the door as I cannot think of anything else that would blow the fuse straight away.
Let us know what you find and be ready to do some soldering with extra bits of wire if necessary.
Someone had a golf mk5 5 door in his garage and he replaced the rear door lock thinking it was at fault and I mentioned the wiring in the rear door so he checked and found snapped wires.
Good luck

Would it be an issue if I fitted a 10a fuse?

If your getting fuse blowing, I wouldnt imagine it will help and may cause further damage eg burning the wiring out.
You can temp try it to see what happens.

Very possibly the above suggestion but keep in mind that the interior lights above in your central overhead console are common failure items if your heavy handed when fitting a replacement bulb.
There's a few good shots in this link
http://www.mk5golfgti.co.uk/forum/index.php/topic,44094.0.html
Drop it down a check for a loose wire.

As above, I've blown a fuse fitting these led's in the over head circuit and it's an odd design. Maybe the connector isn't seated properly.

Traced it back to a faulty boot LED. Got a stupidly bright one from China, claimed 800lm, unfortunately it smells burnt out, no problems since I disconnected it.

Strange it all happened at the same time my battery went, that's what got me all confused trying to 'make the connection'

That is weird.
I had a warning on the dash number plate lights which would both rurn off and when switching lights on and off they'd come back on and I didn't have a clue what it was. Finally by looking closer at the bulbs I realised one bulb was dimmer so replaced that and got a refund from the Chinese seller put a different pair in and all working fine again.
