Mk5 golf Gti temperature needle up and down

When driving slow around town or idling my temp needle goes to 90 no problem, as soon as the speed goes up to 40+ the needle comes back down again. I've changed temp sensor near to the battery but no difference. Has anyone on here had the same problem? Can u point me in the right direction as to someone who has resolved the problem?
Also when I changed the sensor I noticed a coating of oil where the clutch is, maybe someone will know what's causing this also?

Sounds like one of the thermostats. There's a main one and an inline one.

See if you can find someone local with VCDS.

Pre-2007 (or something like it) DSG versions have 3 thermostats.

I just watched a video on how to get the thermostat out on YouTube
it looks like a days work to me
