Before we start. You need to use the best quality beef mince you can find. DO NOT use bog-standard supermarket mince. At the very least buy there Finest/Extra special steak mince. Preferably get the mince from a good quality butcher.
You will need....- 250g of good quality beef mince, with a good amount of fat in it.
- 1 Slice of sh*t cheese. The sh*tter the better.
- 1 Good quality burger bun. I like the brioche type
- A pinch of good quality Salt. I use Maldon
- Freshly ground black pepper
- Tomato Ketchup
- Oil for cooking.. (NOT NANODRIVE 5W40)
- American style mustard
- 2x 8" squares of Baking paper

Put it in a bowl and add some salt and pepper. Put in quite a bit of salt. The more the better :-)

Mix it carefully. Dont work it too much otherwise it will go a funny texture.
Roll it into a ball on top of a square of baking paper

Place the other sheet on top.

Press it down to form the burger shape. It should be about 2cm thick, maybe just a little more.

Press your thumb gently in the middle just to make a dent to help cooking.
COOKINGHeat up a heavy frying pan. And add a few drops of oil.

Put the sh*t cheese on to the cooked side and cook for another 3 mins.

Turn the heat off and if you can, place a lid on.
ASSEMBLYWhist the burger is resting in the frying pan. Cut the bun in half and put some ketchup on the top and some mustard on the bottom.
