Replacement Kitchen Knife

Odd one this, I know, but wifey took the 'best' kitchen knife to work, to cut up some home made cake for colleagues, and didn't bring it back - surprise, surprise.......it's not been seen since.

This was handed down, so probably from the 50's or 60's, and was brilliant... Bevelled on both sides, with a kind of hacksaw cutting edge, really sturdy blade - none of this bendy rubbish, and had a wooden handle.....it cut absolutely straight - crusty bread; tomatoes; onions - all purpose really. About 10" I suppose. Can't see it 're-appearing'.

Anyone recommend any modern day equivalent, please? I do most of the cooking, and used this every day - a drawer full of others that never seemed to 'cut it' ha ha

Get yourself to a knife shop or a catering/cook/food show that sells a range of knives....its a feel thing (and budget). Forget serrated and go for a straight edge.......only use serrated for bread.

As a chef I use all sorts and now only use 4 knives in total for EVERYTHING I do. Mrs MC bought me this one (below) for home last year and it's a winner with everything. I love the Japanese knives for feel with a rounded/oval handle and stunning blade. Pretty resonable price too IMHO.

Ohh and get yourself a decent sharpening steel or stone and (if you don't know) learn how to use it properly.

I just bought the Wusthof set. Top quality german knives. By no means an expert but I spent a long time reading the reviews and wasn't disappointed.

Usually "handed" knifes have a single bevel, and the bevel is a different side according to its hand

So much knife technology.....Thanks for suggestions. So if you are right handed, do you need a right hand bevel (bevel on the right), or a left hooker? Confused....(not difficult, ha ha) :thinking:

They are PROPER lovely Rich! Not cheap either. I don't think ive spent that on a single knife.
