I found the same. The MK7 makes 258lbft torque from 1500-4500 and Edition 30s make 221lbft torque from 2200-5200rpm (standard). I was expecting the MK7 to feel a lot more responsive as a result, but surprisingly, it wasn't! It's probably quicker in reality, but it just doesn't 'feel' it. Probably very tame, linear engine mapping.
The interior is all very familiar as you say, but to me it feels much better put together. Especially the arm rest assembly and centre tunnel/console frame! The MK7 is a lot quieter inside and has what feels like to me, a quicker ratio steering rack. I did notice the MK7 is a little more twitchy in a straight line. I don't know if that's a geometry or tyre choice thing.
The MK7 definitely is not enough of a leap forward in terms of feel to make me drop my MK5, but it is definitely the better car technically.
