Prob just an Intermittent fault. Have you got VCDS or access to it to get a scan?

Did you do a short journey Tara? From time to time I have heard of this when the full cold cycle has not completed. It can also happen when the car has not been used for a period of time.

Any engine management lights on?

vagcom is a must.... the engine light wont necessarily come on straight away. the car needs to detect the fault more than three times in a row to bring it on, if it only notices a problem every now and then, the light will stay off but it will have stored a fault in the EOBD part of the ECU. try that

Possibly an overboost if it's remapped,  you won't get a light on from that and a restart would cure it.
