Noddy question but. If i upgrade my alloys does this affect the overall wheel diameter and therefore the speedo, tacho and mpg?

Not really. If you get the right profile tyres, the rolling radius should be (largely) unchanged.
Use
clicky1
or
clicky2
to calculate the difference in rolling radius.
