I fry off some diced apple first in a little cinnamon then lob that in the batter. Top that with golden syrup and it is de-lish!
....Do you lob that in the batter while it's frying or in the mix before letting the cake meet the pan? [I've clearly been watching too much "Take Me Out"]
Depends if I'm making traditional thin ones or the big arse american type ones. If its traditional its gotta be really finely diced and that goes straight in to the batter before it touches the pan. For the thick ones I just sprinkle it in once the batter is in the pan.
