Any recommendations for shocks assuming that I am going with the H&R springs?

Get the H&R, get springs and you'll end up with a nice stance on your car. Personally I'd keep saving and get some adjustable Coilovers and you will never look back. If not, the H&R are a great spring, add some aftermarket updated ARB's and your onto a winner.

I've got the Eibach Sportlines on my DSG and think they are just right, I personally wouldn't want it any lower. I've heard the H&R's are meant to be slightly lower than the Eibachs.
