Running temp

I have always had vws and they've all ran at 90oc when warmed up but on my most recent one it seems to be running between 75 and 80, sometimes it creeps higher then suddenly drops any ideas?

Thermostat?

It should sit at 90ºC

Thermostat should sit dead on 90. How long it takes to get to that engine temperature depends on the operation of the thermostat. It could be stuck open which would not allow the car to get hot enough to 90 degrees. Item and lol about should be more than £60 easily
