Engine Temp/Thermostat Problem

Well after seeing all the posts about thermostats, and the missus saying the car takes ages to warm up and me saying "they all do that sir" I've been monitoring and today took it out to see.

In VCDS the Coolant Temp never goes above 75.  The very occasional increase to 76 but never more.  When you get on a higher speed road, 60 mph the temp drops down to 70 or less.  Now once its up to temp shouldn't it pretty much stay there?

Now heres the other thing, it took about 20 mins to get to that temp, but on the dash the needle shows 90.  But as above VCDS shows 75.  The needle on the dash does drop down from 90 in the scenario above to show 80-85.

So it seems to me all is not well.  I plan on having the stats replaced (main and 2 aux I think as discussed in other threads (2005 DSG GTi)) and also the ECU Temp Sensor (is this causing the dash to show 90 when VCDS shows 75?)

Car was bought from a VW dealer in October and has 3 month warranty until end Jan, thermostats are covered, so I will take it back to them, just want to make sure we ask for the right fixes to be done.
