Did the new bearing solve the problem? I've exactly the same thing going on currently.

Use Vagcom or similar to actually diagnose the fault.
Check which side is having the problem.
Using the measuring blocks to measure LIVE the speed readings from the wheel.
Verify wiring integrity before replacing the sensor, resistance and voltage
If wiring is correct and sensor has been replaced and still having a problem then you can look at the speed sensor ring.
I had a terrible issue with my TDI which took ages to fix and in the end we were going to replace the ABS unit but the symptoms didn't add up and it turned out the problem was a faulty wire inside the body (all the battery etc needed to come out to rewire it, hitting a pot hole hard caused some damage)
