Quick question, does the car have to be put into some sort of valet mode for disconnection of the battery or anything? (don't want the alarm going mad!)
Or do I just disconnect it and thats it?

Just unhook the negative lead first and then the positive > remove the battery.
Depending on how long its disconnected, on reconnection you may see a few check lights in the dashboard that should extinguish themselves after a short drive.
