Can't help you with part numbers etc but Ive done plenty of cv gators,
Remove the drive shaft nut in the centre of the hub and give it a tap with a punch and hammer so it's loose in the hub.
Remove the bottom ball joint nut or pinch bolt that holds the hub and wish bone together then knock the wish bone ball joint out of the bottom of the hub.
Then pull the drive shaft out of the hub and pull it to the side, you may have to have a little wrestle with the hub to pull one way as you pull/knock the shaft out completely.
Cut the old gator off
I have this cone thing ( it's ment for this job) that you grease up and put it over the cv joint then get your new gator and turn it inside out and put the wider end on the cone first and push it over the cone. The cone basically lifts the gator over the cv joint.
Position the gator how it's ment to go but before you put the clips in pack it with grease, clip the gator up and just put it all back together and give it a wipe.
Also you can remove the drive shaft completely and you won't have to mess around with the gearbox oil pouring out but I find I only have to pull it out if there is drop links and roll bars blocking everything up. Never done my mk5 gators but this way will work fine I'm sure.
