Seriously tempted going down this route. What are the pros and cons and power differences over stage 2.  What's the ED30 like to drive at stage 2+??

I am really enjoying my ED30, and am thinking of putting the Golf R on hold, and have a good play in this first.

I think you'll also need an aftermarket intercooler and intake to take full advantage of Stage2+, Oli.

think intercooleris a must to be honest. at AMD today they comented that my inlet temps shot up very quickly resulting in power loss so required a good cooldown periosd bewteen runs

Sadly I'm not going to the rolling road but if you're my way your welcome to have a ride and see what you think.
I had been pottering around in my stage 2 ed30 for months, it was everything I expected - smooth yet progressively powerful.
Stage2+ delivers far more urge in every gear and has a wider band of power allowing you to happily short shift if feeling lazy but
pressing on you really have to watch the rev clock as gear changes are required in the blink of an eye.
6th gear is a somewhat surreal experience as I've never driven a car that doesn't appear to run out of puff.

So does an S3 intercooler go straight on??  And would I notice a difference driving???

....A certain amount of fiddling about and not advised to be done on your front drive at home (though some have!) but no problem for you because you've got a professional workshop.

I don't have first-hand experience but would expect you'd particularly notice some beneficial difference in hot weather.

I think the forge will be easily fitted by yourself n comparison to the an S3 or THS style intercooler as the front slam panel doesnt need to come off

When / where is the Surrey RR?

I maybe able to attend....I'm running APR's stage 2 with their HPFP and RSC exhaust on my manual ED30.....a definate improvement over Stage 1 which was a revelation over 0E.
All I need now is the new APR Stage 2 intake.
