Coolant light and level

Hi, Sorry if this is the wrong place for this. I'm having a weird issue with my '04 Mk5. I've done a search and see that there have been a few people with coolant level issues but they didn't seem to be the same issue (possibly).

When I got the car everything was fine and then one day the engine coolant light came on the dash and beeped away at me, I was on the way to work so couldn't do anything about it. I checked when I got to work and all looked ok, then again before I left and again it was fine and the light didn't come on. A few days later it did the same thing just as I was leaving home so I stopped the car, levels were all ok again so I decided to carry on. When I started the car the light didn't come back on even though it had been on about 2min previously.

Having driven the car pretty regularly since it hasn't done this to me at all again (last time probably late May) until yesterday when I was going to go to the driving range. When I checked the level this time it was about 2cm below the min line so needed topping up (which I did).

I am really confused at what's going on, is there anything I can do to see if I have a fault somewhere as I don't really see how the level could get that low before a warning, or even be full and get a warning?  :confused:

Could be the coolant level sensor.

Thanks for that pointer OSB, not sure how I missed that one when I searched! Looks like I may be in for a replacement expansion tank to stop it :scared:
