Yes, I'd certainly recommend one.

As luck would have it, your car already has one.

I was looking into the unitronic intercooler that can handle 500+ hp, good or is there a better one?

Well, yes, I'm sure it's good..... if you have 500bhp.

But you don't have 500bhp. It would be pointless fitting that to a standard engine. The stock intercooler is designed well and works well.

You'll only benefit from an aftermarket intercooler if your inlet temps become too high, for example on a big turbo build.

Not really anypoint uprating the intercooler until your going stage 2. Wont really see any gains from it to justify the cost.

I was under the impression that even without a map it will make a slight difference, even if only marginal. The ecu will pick up on the cooler intake temps and you should see small gains even if it is only 1-2bhp, but ideally you need a remap. I find the forge twintercooler works well and is relatively easy to fit in comparison to replacing standard intercooler. There are some cheap copies of the twintercooler on ebay maybe give one of them a shot if your not too fussed about getting a remap.

Slight difference could mean a 1-2hp, but mainly less HP lost through heat, reduced timing etc. when driven hard. Bang for buck on a standard car it is pointless.

£400 - £600 for 2hp. Spend it on a stage 1 remap. you Wont feel anything on standard map apart from a lighter wallet.

Agree with everyone else on this thread. If I were you I'd leave the intercooler on for now, get a good induction kit along with a decat and go get it mapped (from somewhere good like rtech). You only need to upgrade the intercooler in situations where the intercooler is holding you back in terms of making power but you won't be reaching those limits on a stock k03 GTI.
