Turbo issues

Hi!
I've got an Golf 5 GTi DSG with Oettinger stage 3, i've had some issues with the PCV, DV and fuel sensor / cuts.
I've recently swapped my DV to a Forge DV, swapped my high pressure fuel pump, fuel pump in the tank, fuel filter to 6,6bar, open air filter kit, new MAF sensor, cam follower, and new PCV.

I've started logging a bit with Torque, and it seems when i hit high speeds / uphill i get some weird loss in power.
Especially in 4-6th gear around 4-5000+ RPM.
I can see the bar drops from around 1Bar to 0.3-0.5 several times, and i feel the car going back and forth with full throttle, and it keeps getting really bad at 200+km/h.

Anyone experienced something like this?
I'm going to change the vacuum lines from the new DV to fuel lines, hoping that's the main problem.

I got two logs, one with 5th gear and one with sportmode.
5th gear

and sport mode

Highlighted some odd areas.

Also, the only code the car is throwing is P0192, fuel sensor in the fuel rail low circuit.
This happens really rarely after changing all the fuel parts, it cuts out maybe for 1 second and it's back. Happens like once a week.
