Full performance exhaust assistance / guidance

Hi all. Am still pretty new to this forum and maybe I’ve not searched as thoroughly as an experienced member would but anyone’s assistance would be greatly appreciated on the below.
After parting company with my Black 06 GTI I’ve now just gone and purchased myself a low mileage Candy 07 GTI.
I have started to buy various internal enhancements but following my internal enhancement quest I will then move onto increasing power.
So, I live in the Isle of Man where we don’t have MOT’s. Seeing as we don’t have MOT’s that leads me onto exhausts.
All the exhausts that I have read about mention Cat this and Cat that and emissions the other. What I wanted to know is, is there a recommended full system that includes the headers that has a proven track record in performance increase and durability.  Following the exhaust I will purchase a Cold Air intake (Evoms or ITG) and then get a Re-Map.
Lastly, on the Isle of Man we don’t have any rolling roads or companies that would Re-Map so I was wondering if anyone knows of a quality company in the North West – Liverpool would be handy as that is where the Ferry from the Isle of Man docks?

If you don't have to worry about MOTS, I'd assume you could get a full exhaust system with the cat removed. Something like this, for example:

Thanks for taking the time to respond Rob, greatly appreciated.
I very read a little about these systems on the forum and they get great reviews.
Question though. With this system does it not trigger a dash warning light and if if does would a VAG garage be able to cancel it out without it causing any unseen harm to the motor?

The warning light will come up because the sensor realises there's no cat in there due to the emissions but with Vagcom you can get rid of it.

Full system it will be. Just need to decide on Brand now.
Getting a little excited about collecting it now, a week Friday and it will be mine, coupled with a 3hr drive back to the ferry...happy days :driver:

Ive had a BCS Powervalve Sport TBE with 200 cell cat back for a couple of years, epic system. As you don't need to bother with the cat.......HAPPY DAYS!!  :pomppomp: :pomppomp: :pomppomp:

It's looking that way MC71, nothing but good reviews pal.
This modifying lark can't be anymore expensive than my race bikes so seeing as I've now given up racing I'll be quids in  :signLOL:
