Keep your CK and fit them to go to shows and gatherings, unless you can sell them for a good price, of course.
Brakes are easily transferred and it's something that any car benefits from.

I've fit lowering springs to both my Golfs and I wouldn't have stock springs again. I don't find the H&R -30 mm too harsh for the Ed. 30. The adjustable Konis must help a bit too, since they're set to handle the odd bump on the road. The SuperPro ALK is always a must have.
Other than that and an exhaust you shouldn't need much more done. Good luck and have fun with your V6!
