GEARS!!!

going from 1st to 2nd and 2nd to 3rd is a nightmare its so hard why is this?
it happens within the first 20mins of starting the car is it coz its cold?

its a 2005 mk5 gti 2.0T manual with 80k

could be a few things

misaligned or excess slack in the gear linkage (its 2 cables + brackets that can wear)
worn syncromesh
worn clutch components (slave /master cylinder / worn clutch itself) (which can exhibit as difficult gearchange)

is it a new thing or happened gradually? any recent changes?

Doesn't sound right - the MK5 manual gearbox is usually a lovely box - is this a new thing or has your car always been like this?
