I all of those films my car sounds like a jet fighter. I think I have to change the exhaust soon....

I presumed that you Had overdubbed a jet engine on that video

Nope, original sound. 
And I looked at the other videos and it sounds the same, so it was not an isolated event.

I think you actually made the engine swap, installed a 3.6 and forgot to mention it

No reason to go for the 3.6 engine instead of the 2.0 TFSI one (maybe except the sound). 
But I am fine with the current engine. No plans (or money) to change it. Maybe some exhaust mods to make it sound "normal".

Please jar my memory, what your car's weight currently?

The car weighs 1420 with a 100kg driver and a full tank of gas  . Had it measured at the last "MOT".
For track days I take the spare wheel out, and also some other stuff I have in the trunk (coolant, oil, windshield liquid, etc). And since I weigh ~85 kg, the car should weigh around 1380 kg with me in it and a full tank of gas.
I know, it's a lot....
