I was a little concerned the eibach pros might decrease my ride handling and give me a softer ride.
I know when my rear spring was changed it was with a OE sports spring.

Why should the Pros be any softer?
They'are slightly stiffer in fact.

I'd go für Eibach Pro or Volkswagen OE springs and if you can afford it,
add some good dampers like Bilstein or at least OEM GTI.

would need to check strut diameter if you do fit GTI suspension as they're 55mm and most other golfs are 50mm diameter.

If its a GT, it should be 55mm diametre. Mine are on the H&R springs and the ride is stiffer but comfortable!

All Mk.V and Mk.VI from 140 BHP on have the 55 mm strut.

If you have a smaller TDI (105 BHP) or a small TSI (122 PS) they may
have 50 or 55 mm.
But have a look at your front calipers. ''FSIII'' ist 50 mm and ''Ate'' is
55 mm. This is a general rule > so no measurement required.
