Interesting, it sounds like it is the regulator/ bypass thermostat but it isn't in the same place as mine then.

Silly question but it is a UK spec car?

This diagram shows the hose layout of an early 05 car. The thermostat is no 6

On this diagram of the radiator I can only see one take off from the left hand side (standing looking at the car from the front) and that connects to the main thermostat on the engine block???

Is your rad different?!

We are talking about a 2.0T  gti with an AXX block aren't we?!

Yes its a UK spec car and as far as I know the rad is the standard one. 2005 GTI manual AXX block.

I had a look at the link above but it doesn't make a lot of sense to me. I took a pic of the hose in the car and have circled the part, but do I need to put the photo to photobucket (have an account) to be able to post it here?

Parts I have changed are the the thermostat which is inside a big housing that bolts to the block under the inlet manifold, part no V06F121111F. And the Temp sensor above the gearbox on the right of thr engine as you're looking from the front, part no 06A919501A. So there should be one left, the inline one on the turbo hose. Correct? This one, part no 4E0121113, and (I think) is where I've described.

Inside the circle there is a silver bit. It's not that. It's the black bit directly underneath/behind it. The photo it taken looking down the back of the very left side of the radiator. Looking down the side of the engine, alternator and ac pump. I was stood at the front of the car.

That is not it. I don't know what that is but the item you want is behind the left half of the rad in a vertical rubber pipe as described by itguy.

Ahh ok

They are the Aircon pipes coming off the Aircon radiator.

As said, the one you need is in my photo above, it's in the vertical rubber hose behind the left rad fan.

It's low down though so you need to look hard or from beneath with the drip tray removed

Ironically for the first time in 3 years I have noticed some odd temperatures on the gauge.
The car has always raised to the 90 mark within a few miles and stuck there rigidly.

Today whilst driving around noticed the temp falling and struggling to stay at the 90 mark.

No coolant leaks
Fans working
MPG normal.

When I got back let the car cool then let it run on the drive and it sat at 90 again un moved.

Very odd.

Thermostat?

Wolf burger. You have described the common symptoms of the main thermostat mate. As a general rule if the temp drops once it reaches 90 it's the main thermostat.

The pipe I'm describing is under the aircon pipes and under where the metal and rubber pafts join, you can just make it out. It a fat black pipe, circular part uppermost, it has rubber water pipe on either side of it. The part circled is solid and looks like it houses something.

I'll try and put another pic up later of looking down the back of the radiator like itguy is describing. There is a vertical pipe that is rubber, it has a bend on the top. Each end of the pipe turns to a metal joint then pipe and one end of it goes under the intake manifold I think. If this is the pipe in question, I don't see anywhere where an inline temp regulator could be housed. I do in the other pipe. I'm confused.

When my phone is charged I'll nip out and get a photo, I may need help again posting it!

Heres one of the pipe infront of the radiator, where I've circled is the end that goes under the intake manifold.

This pic is looking under the intake manifold. On the very top left of the pic you can see the now metal pipe coming in from above. Circled, is the end of said pipe, it has a flange on the end of it, held in place by 2 torx screws. One you can see, the others rough position is marked with the X. If I undo this, is this where the regulator is housed?
